White Chicken Chili

 

White chicken chili is a chili recipe without the tomato base. You can either use white chicken meat, turkey or duck meat. This all-in-one dish also contains beans making it a complete meal already.

 

Like all chilis, white chicken chili is a favorite for cold weather dining. This is usually topped with cheese, chopped onions and sour cream. White chicken chili can be served with saltines, tortillas, corn chips or topped over rice or pasta. It is usually cooked slowly using a heavy cast-iron skillet or crock pot over a low heat. White Chicken Chili Recipe Slow Cooker


This is an
easy-to-prepare white chicken chili recipe that uses a slow cooker. You will need at least 30 minutes to prepare and 12 hours to cook the meal.

 

Pre-soak a pound of dry great northern beans overnight.

First, you have to cook two pounds of boneless and skinless chicken breast in 10-12 ounces of chicken broth.

Let cool and the shred chicken. Set aside the broth.

Remove the water from your beans and put the beans in a large crock pot together with 28-30 ounces of chicken broth, including the broth you used when you broil the chicken.

Also add to the pot one ten-ounce can of diced tomatoes with green chilies, one teaspoon minced garlic, one tablespoon chopped onions, one teaspoon oregano, two teaspoons of ground cumin and one teaspoon of chili powder.

Add in the chicken, salt, pepper and cayenne pepper to taste.

Make sure that you have enough broth to cover everything in the pot.

Add water or more broth if necessary.

Cook slowly over low heat for 10-12 hours or until the beans are ready.

 

You might need to occasionally add more liquid to always keep the beans covered.

 

You are ready to serve your white chicken chili when the beans are tender. Serve them in individual soup bowls topped with cheese, sour cream and tortillas. The red lobster biscuit recipe prepared in advance will be the perfect complement to complete a sumptuous meal.

Celebrity chef Rachael Ray has come up with several fast white chicken chili recipes. This one is not only fast but has the unique flavours of the Southwest too. You can prepare, cook and serve this dish in less than an hour.

 

To start, heat four tablespoons of vegetable oil in a saucepan over moderate heat.

Add a pound of boneless and skinless chicken breasts cut into bite-sized cubes.

Stir in four teaspoons of chili powder, two teaspoons of ground cumin, one large chopped onion and one medium chopped green pepper.

Cook, stirring until chicken is ready.

Add in one and a half whole kernel corn, two 15-ounce cans of white kidney bean, drained and rinsed and bring to boil.

Reduce heat and cover.

Let simmer for five more minutes.

Stir occasionally to prevent sticking.

Serve immediately in bowls sprinkled with shredded cheese.

 

 

 

 

 


White Chicken Chili Calories


White chicken chili is also a favorite among dieters because of its low calorie content. A regular serving of white chicken chili is less than 200 calories.

 

It is also very low on fat, cholesterol and sugars. White chicken chili is also a good source of potassium, Vitamin A, C and B6, iron, manganese, folate, phosphorous and thiamine.

 

On the downside, you have to watch out for the high sodium content of these meals. You can substitute regular broth's and cheeses with their low-salt counterparts. Watch out also for the add-ins and toppings that you usually eat with the dish. You can get as much calories in your chips, sour cream and corn bread as you can get from the chili.
